These courgettes are versatile - they can play the supporting role in a salad, be the star of a pasta dish, or even show off as a solo act. Don't be afraid to get creative with your seasonings; shake things up with different salts to give your taste buds a rollercoaster ride. What you would need:
Courgettes (zucchini) - 3 medium courgettes, cut into half slices (half the courgettes and then cut slices about 3mm tick)
Garlic salt - pinch
Vegetable Oil - for frying 2 tbspÂ
4 Slices of Bread - toasted
Prep:
Wash your courgettes, then cut them into half slices. Cut each in half and then slice it into 3mm piece.
Heat a pan on a high heat and add the vegetable oil. Add the courgettes stir-fry for 1 minute, then reduce the heat. Do not overcrowd the pan and keep the ingredients moving. Take care to not brown the courgettes too fast.Â
Add 1 tablespoon of water and seasoning salt and cook over a high heat until all the courgettes are cooked but not too soft.
Serve on toast with salad.
Recipe Tips
Make sure all the food is prepped before you start cooking.
Cut all of the vegetables to a similar size to ensure they cook evenly.
The oil needs to be hot before you start cooking, but reduced to a medium heat once you start cooking.
